Burger Ingredients – makes 6 small patties
400g x fresh minced beef steak
30g x finely diced shallot
5g x olive oil
1 tsp x smoked paprika (pre-weighed)
½ tsp x garlic powder (pre-weighed)
¼ tsp x onion powder (pre-weighed)
5g x sea salt flakes (pre-weighed)
3 tsp x low carb BBQ sauce: we love Dr Wills or Hunter Gather
To build
Pickled cucumber or gherkins
Baby gem lettuce leaf
Plum tomato
Buffalo mozzarella
Method
Lightly cook the dice shallot in the olive oil until slightly soft then leave to cool.
Thoroughly mix all burger ingredients together and divide evenly into 6 even balls, each will weigh roughly 80g.
Using a cutter, the same size of the low carb bun, push down the patties to make an even thickness, the cutter helps compact the patty.
Heat a pan to a medium heat and then add the patties to the pan. Pan fry the patties for 5-7 minutes flipping regularly or until the core reach 60°c. Ensure both sides are caramelized.
When the core is 60°c add 2 thin slices of buffalo mozzarella to the burgers and set aside to rest.
Cut the low carb bun in half, place back together and warm through an oven for 2-3 minutes at 160°c.
To build the burgers, add a slice of lettuce to the base of the bun followed by a slice of tomato. Add the rested burger and top with some sliced pickles.
To the top of the bun finish with a teaspoon of Dr Wills BBQ sauce and place on top of the burger.
