Ingredients (2 pancakes per serving)
- 1 large eggs
- 60g cream cheese
- 60g almond flour
- 1 tsp baking powder
- 15g erythritol or other low-carb sweetener (optional)
- 1/2 tsp vanilla extract (optional)
- 1/2 tsp cinnamon (optional)
- Kinetic Kitchen Pecan Nut Butter
- Butter or oil for cooking
Instructions:
- Crack the eggs into a mixing bowl and beat until light and frothy.
- Add cream cheese to the eggs and mix until smooth.
- Add the almond flour, baking powder, and sweetener (if using) to the egg mixture, and stir until well combined.
- Stir in the vanilla extract and cinnamon (if using)
- Heat a non-stick pan or griddle over medium heat and grease with butter or oil.
- Pour the batter onto the pan in 30g portions and spread into a circle.
- Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
- Repeat with the remaining batter, adding more butter or oil to the pan as needed.
