Keto Hot Cross Buns

Who says you can't have your bun and eat it too? If you're on a low-carb diet but still crave the sweet, spiced goodness of a hot cross bun, this keto recipe is just what you knead. With almond flour, coconut flour, and erythritol, these buns are a hot cross 'fun' that won't wreck your diet. So, hop to it and let's get baking!

 

Ingredients:

For the buns:

  • 240g almond flour
  • 30g coconut flour
  • 30g golden flaxseed meal
  • 30g erythritol or other low-carb sweetener
  • 5g baking powder
  • 2g cinnamon
  • 2g nutmeg
  • 1g allspice
  • 1g salt
  • 120ml unsweetened almond milk
  • 60ml melted coconut oil
  • 2 large eggs
  • 2.5ml vanilla extract
  • 30g raisins

For the crosses:

  • 15g almond flour
  • 8g coconut flour
  • 15ml melted coconut oil
  • 10g erythritol or other low-carb sweetener
  • 30ml water

Method:

  1. Preheat your oven to 180°C and line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the almond flour, coconut flour, flaxseed meal, erythritol, baking powder, cinnamon, nutmeg, allspice, and salt.

  3. In a separate bowl, whisk together the almond milk, melted coconut oil, eggs, and vanilla extract.

  4. Add the wet ingredients to the dry ingredients and stir until well combined. Fold in the raisins.

  5. Form the dough into 8 equal-sized balls and place them on the prepared baking sheet.

  6. To make the crosses, whisk together the almond flour, coconut flour, melted coconut oil, erythritol, and water in a small bowl. Spoon the mixture into a piping bag or a plastic bag with a small corner cut off.

  7. Pipe a cross over each bun.

  8. Bake the buns for 20-25 minutes or until they are golden brown and a toothpick inserted in the center comes out clean.

  9. Let the buns cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
