Carrot & Pecan Cake Balls

In need of the healthy hit of instant energy. Try this quick and easy paleo recipe for all you carb lovers!

Ingredients

75g x jumbo oats (GF)

50g x Kinetic Blends Pecan

60g x flaked almonds

60g x walnut halves

200g x fresh Medjool dates (pitted)

75g x grated carrot

30g desiccated coconut

1 x large orange zest

1 level tsp x cinnamon

½ tsp x mixed spice

1 x vanilla pod (seeds)

      1. Mix together the oats, flaked almond and walnuts in a baking tray,
        roast in an oven at 160 degrees for 10 minutes. On a separate tray add the
        coconut and roast at 160 degrees
        c for 4-5 minutes until a light golden colour.
        Set all aside to cool.
      2. In a food processor add the nut butter & pitted Medjool dates, blitz into
        a paste.
      3. Add all ingredient to the date paste and blitz until fully combined. Try to not over blitz the mixture, this recipe is best with some texture.
      4. Roll into even size balls and store in the fridge.

Serves 10-12 balls, Prep Time: 5 Mins, Total Time: 5mins
